Counters

A tasting counter takes more than any kitchen. Bottles go down hard, glasses get knocked over, cloths wipe it all day with whatever spray is nearest. And champagne is acidic, a pH around 3. On polished marble that leaves dull rings where the flutes stand.

What we'd use

  • Granite doesn't react to wine and absorbs little.
  • Quartzite looks like marble and resists acid, but it costs more to cut.
  • Dekton comes in slabs up to 3.20 by 1.44 m, so a 3 m bar has no joint.
  • Quartz works indoors, away from direct sun.

Marble is possible if you like a counter that shows its history and get it repolished now and then. Just decide that before you open, not after.

Cellars

Underground it's around 10 to 12 °C and very damp. Cold stone collects condensation and porous stone draws water up. Use a stone that absorbs little, seal it, and stand it on a ventilated frame. Treat steel supports against rust, a rust stain on white marble is very hard to get out.

A thick-looking bar

We glue a 3 cm strip under the front of a 3 cm top, so it looks 6 cm from the customer side at half the weight. A 3 m granite counter 60 cm deep is still about 150 kg, so supports every 60 to 80 cm, and steel brackets for an overhang past 30 cm.

Timing

Not during the harvest. Late winter suits best, before the spring visitors. We can measure during opening hours and fit on a closing day.
